Seafood in Paradise Travel Video duration – 3.55 minutes Atlantic Bar and Grill Turks and Caicos Travel Video Gourmet - Regionale Liz Tracey Executive Chef, Atlantic Bar and Grill - Hi I’m Liz, welcome to Atlantic Bar and Grill. - I’ve been traveling around Turks and Caicos and I’ve noticed that seafood is very popular here, and I heard that the Earl’s Lady, comes here if she wants to eat. - So they say - You have a specialty dish? - Yeah, its wasabi crusted. So we start with sushi grade tuna, start with that. - So what tuna are you making exactly? - I am doing the wasabi crusted grilled tuna. - A little bit of Asian influence? - Yeah, and with the sauce that goes with it, it’s also Asian. I do a radish reduction with soy, and then a little bit of cream in it at the end, that’s what it is served with. So I take the wasabi, and I just coat it, pat it on a little bit so it sticks when I put it on the grill. - So far so good - Salt and pepper. That’s the difference between eating out and eating at home – people don’t see the pepper…just put it - On the hot spot and you leave it on the hot spot for probably three minutes each side and then it will be tender. For just a little bit longer. - If I am making this at home, do I have to make this in the grill that’s on the bottom part of the oven or can I make it in the actual oven? - You can make it in the actual oven. I would just use a really high heat, sear the other side, so that you don’t overdo the temperature (noise)…….. We’re just about there… with tuna, because it is such a beautiful color, it doesn’t really take much of a garnish. There, I just take my tuna off the heat and just let it rest for a second and that seals all the juices that are going through there. Get a plate ready and I start with basmati rice, - And out here, in this outdoor kitchen, I mean, this is so unique, the only tools that we are using are a rice cooker, the grill and your industrial fryer over there? - Yeah – it’s the only heat sources I have right now. It’s kind of nice, it makes cooking a challenge. And I have a great view of the ocean off the back of the restaurant there. So it’s nice in the afternoon. - I’m sure a lot of people just come by and watch you cook. So it’s like you are giving free cooking lessons all day long. - Slice it nicely. That’s how - It’s pretty - Pan it over the rice; add roasted vegetables and this is my radish soy sauce, with a little bit of cream in it….. That’s it - This is absolutely delicious, do you mind if I dig in? - No, not at all! - Then I’ll go find myself a table - Bon appetite - Good night.
