Tuscan Market

Salumeria Rosi, Upper West Side

Tuscan Market Travel Video duration – 5.08 minutes Tuscan Market New York City, USA Gourmet Regionale Travel Video Hi Buon Giorno, Que siere Pleasure Why is Salumeria Rosi called a Tuscan Market? It is not only restaurant. A restaurant that is the part of this shop. It is a market where you find fantastic, incredible…de Parma from Santa Danielle plus something very particular. So this is the market and this is the restaurant and let’s go into kitchen. I used to have a restaurant in Italy and… Your family’s restaurant? My family restaurant and it is on top of the hill. So beautiful and they have this aromato. It’s a place where you grow only herbs so everyday I was in it, for me to pick all the herbs I put in the pocket, I started to put to use in the kitchen. So your kitchen is beautiful. What are we going to make? We are going to cook this…this is shrimp that arrived from Maine this morning. It is so fantastic that they are seasonal so they are so sweet you can taste the flavor. They are so great. So we have this beautiful shrimp, we kept this and the radicchio, salt because the salt is the flesh of the life, olive oil form Italy. We need to put a little more, the juice… And that now it is start to be you know the shrimp when it starts to cook, the orange color start to come out, it is nice and the better blend of flavor of the shrimp. When you eat shrimp, you eat it like this. It is a way to eat, it is in this way. Wow salty sugar Ok these tomatoes. Oh that looks beautiful. I can taste the radicchio and the orange. But it is the taste of the shrimp. Thank you. Thank you. There was a restaurant from the 1800s in Lucca in Tuscany. My parents met up in 1964 and my house it was above the restaurant. My parents wanted not for me to be involved in the restaurant business. They wanted to see me doctor, they wanted to see me architect. If I want to go cooking school, I need to pay by myself. I studied four years in cooking school, I did a few different masters but I grew up with my mum, I stole from her because… Stole or borrowed? No I stole because my mom didn’t want to teach to me but then when I started to work a lot with her, she started to share all the recipes. I think she had the respect for the ingredients until a few years ago she never ate food that was in the refrigerator. What is Dante Feretti? What is the imagination what is the design? This is Italy and it started from Cibolda. Cibolda is a painter from Italy. They use the vegetable, meat to make this painting so he took the same idea…Italy it is a divine to any different region. There they have product they have ingredient. This is where I came from in Tuscany, Emilia-Romagna from where I came from with my partner. So we thought we are more careful (or colorful) and then we like enjoying our Salume. It’s lively Yes I love it. I love that you decided to do that in the Tuscan region. It’s fantastic. Thank you for coming to Salumeria Rosi Parma Corto

Italy’s Artisanal Prime Cuts in the Heart of NYC

Everyone knows that New York is a melting pot; people from all over the world have brought unique aspects of their homelands to the city, as seen in fashion, design, cultural events, language and heritage. The best part about all this influence, however, is the food! From Chinatown to Curry Hill, New York restaurants offer flavors and cuisines from around the world. Those who want a taste of rustic Italy, and also an authentic lifestyle experience to accompany it, need look no further than Salumeria Rosi on the Upper West Side. It was opened in 2008 by the Rosi family, who for the past 30 plus years have owned and operated Panacotto in Parma, a company producing artisanal quality cured meats. Partnering with chef Cesare Casella, they created this specialty foods shop and tiny restaurant that brings the delicious meats, cheeses and accompaniments of old-world Italy right to the heart of the city. Done in rich wood tones, the relaxed dining room evokes the ambience of a contemporary Osteria. Small plates like Costina (spicy Tuscan spare ribs) and Acciughe Marinate (marinated anchovies) are accompanied by a robust Italian wine list. But, the best way to indulge at Salumeri Rossi, is just as the Italians would: at the meat counter. Proscuitto, pancetta, sausages, salami, speck, mortadella --- if you can pronounce it (or even if you can’t), you’ll be able to try it here and take it home. The knowledgeable and jovial counter staff complete the experience, sharing tastes of the offerings and tidbits of advice.
