Josh Capon Executive Chef, Lure If you come to New York, you have to come to Lure. What can somebody expect when they come in to your restaurant? Me. You got me. They call me Shamu People go to sea world to see Shamu. People come to Lure to see me. The restaurant has a very nautical theme I think we decided that we wanted to have a sea food restaurant. I know that we came up with the design, kind of a luxury yacht experience like the Queen Elizabeth. We do have a first class sushi bar as well as a first class raw bar. Along with the sushis, we do a lot of carpaccios, a lot of ceviches, a lot of tartars as well. Where do you find your ingredients? These days you can pretty much get your hands on anything. This is a beautiful daurade which comes flown in from the Mediterranean and what we do here is pretty cool if I may, is most of the time when you eat a whole fish, you find it difficult to eat because you find yourself running into a lot of bones. The way we butcher’em here is that we take out the whole inner skeletal structure. Like a filet? Exactly you’re not constantly running into bones. When I was in Greece on my honeymoon, I found that was struggling with their whole fish because of all the bones and my wife insisted that I go over and cut and de-bone the fish for them. So ever since then I said, “Let’s try to make it as easy for the customers as possible.” These are some of the signature dishes. Starting over here we have a yellowtail carpaccio also known as hamachi and with a little bit of sliced jalapeno and a little bit of green apple over the textural crunch. Ummmm, it’s sweet too This is what we called our yellow fin tuna tiradito sashimi tuna soy sesame dressing and paper thin slice of jalapeno with a little bit of heat. I liked that so much that I had to go for a second. We want people to have a good time. Obviously the food is important but to me there are a lot of potential restaurants where you find yourself at dinner like this, all stiff with a jacket. That’s the last thing what I want here. I think we have a very good understanding of what hospitality means here. I know when people come in to our restaurant; we really welcome them in to our house for the evening and we treat them like our guests.

Feel the Gourmet Allure of Lure

It’s hard to get more stylish than the fashionistas prowling the trendy streets of SoHo, but Lure Fish Bar’s chic, ultra-modern interior comes close. The glitzy subterranean eatery has the feel of a superbly appointed yacht cabin, with a ship’s distinctively curved ceiling, sensual low lighting, slick, circular leather booths and round, nautical-style windows, ideal for peering up at the elegant heels of the pedestrians on the sidewalk above.

 

The Menu: As the name and the unmistakably seaworthy decor suggest, Chef Josh Capon’s menu is heavy on seafood, with starters like New England clam chowder, niçoise salad, garlicky lobster croutons and tuna tiraditos in snappy ginger vinaigrette. Notable entrées include mahi mahi tacos in a crispy tortilla shell, an abundant serving of steamed mussels in lemon and white wine and a whole daurade accompanied by dill gnocchi. There’s also top-flight sushi, sashimi, and tempura and a winning raw bar spanning both coasts.  

 

The Must Have: While you’re almost obligated to order at least one item that’s sprung from the sea (the nautical theme is practically daring you not to), you won’t be disappointed by sticking closer to shore, either. Lure’s best-kept secret is a sophisticated burger that’s a take on the infamous patties at the In-N-Out chain on the West Coast. It’s served on a brioche and is actually more delicious than the better-known burger at Fanelli’s across the street.
