There are changes afoot at downtown NYC restaurant Hotel Griffou. The layout has been tweaked with new cozy nooks carved out for imbibing, and best of all, there’s a new chef on the scene. Enter Chef David Santos, most recently of 5 & Diamond, who has revamped the menu and put his personal stamp on the subterranean restaurant’s offerings. Inspired by his Portuguese upbringing, Santos’ cooking is both rustic and refined, revolving around fresh seasonal ingredients with a focus on seafood. Standouts include grilled Spanish mackerel, seared sea scallops, homemade chorizo and the coveted Santos burger with pork and eggs, which is only available at the Portuguese style brunch. With an oft-changing menu, there is always good reason to check into Hotel Griffou and see what Santos has up his sleeve.
