Central to Charlie Palmer’s Vegas outpost of his famed New York City restaurant is a 14-foot-tall Plexiglas and steel enclosed tower housing all the bottles found on the menu’s wine list. Inspired by a scene from the movie Mission: Impossible, designated “wine angels” in harnesses zoom up and down the lofty wine rack with Cirque du Soleil–style drama. This futuristic vision is enhanced by soft floral arrangements, swan motif and a burgundy and gold color scheme that exudes regalia and dignity. Located in the Mandalay Bay Hotel, Aureole brings Las Vegas dining to new heights.

 

The Menu: The theatrics of Aureole extend to its cuisine. Focused on seasonal ingredients, the dishes are composed using fine French cooking techniques that showcase comforting American flavors. Try the sea scallop sandwiches in a crisp potato crust, or the wood-grilled filet mignon in a cabernet reduction. For a real sampler of Palmer’s talents, hit the main dining room and order the prix fixe tasting menu. For something even more special, request the Swan Court, where live swans swim in a pool around you.

 

The Must-Have: Offering nearly double the options found at most restaurants, the dessert menu barely does justice to Palmer’s idiosyncratically presented sweet treats, which will be the crowning glory of an unforgettable meal.
