Savor Homegrown Ingredients and Local Recipes
Take a walk around the Bellefield Great House in Montego Bay, Jamaica, a luxurious destination for all types of special events. Dining and entertaining was just as important in 18th century as it is today, and at this historic plantation you can explore the culinary culture of days gone by. The property boasts organic fruit, vegetable and herb gardens, and a functioning jerk pit where some of the island’s best-loved flavors are concocted. The back lawn and beautiful 200-year-old Guango tree is a fairy-tale setting for elaborate weddings, private banquets and even corporate events. Michell Rouseau, Bellefield’s caterer and event planner, prepares traditional Jamaican dishes, adding a contemporary style to native Caribbean cuisine. For one popular dish, the national fruit, ackee, customarily used as the centerpiece of a breakfast dish, is tossed with garlic, scallions and tomatoes (and a bit of nouvelle flair) to create a creamy pasta dish. Fresh mahi mahi fillets are marinated in lime juice, ginger, thyme and orange zest, steamed to perfection and served alongside breadfruit roasted on an open flame. This simple, savory and modern meal is best washed down with peeled ortaniques (Jamaican oranges).
