You know when you see, sometimes you know we get used to this beauty and we don’t appreciate it. So that sometime when you come and you see someone with his mask off and watching this beautiful paradise. Anybody coming from Boston or New York or any other big cement city would not have even imagined this existed. Massimo Olivari, Head Chef Well I was born and raised in Italy. It was about 12 years ago I moved to Bermuda. When I first arrived here, it was, as I said it was, everything was different. As I said, I found all this fresh and beautiful sea food, lots of fish and as I said different spices. I tried, even myself, I tried new dishes, some new flavors, a new kind of combination, tried to put ingredients together and at the beginning it was a good challenge and I really enjoyed it, it was fun, it was nice. We use the best ingredients in the market, fresh ingredients that’s the secret …we use various…very simple ways to cook, you know, we don’t work too much on the food, we don’t elaborate the food too much, it’s simple but it’s great it’s fresh. Mickey’s Signature Dishes What I would like to show you now are the two most popular dishes that we have in the large menu, starting here with the local Pink Swordfish Carpaccio that is served under a crunchy vegetable salad and it is seasoned with chives and red pepper corns, of course extra virgin olive oil and fresh lemon. The other dish that is very popular at Mickey’s is this beautiful Chicken and Mango salad with fresh fruit. This dish is on the menu since the first day we opened the restaurant. A full meal but at the same time light and tasteful. Well going on the pasta side, we have this beautiful Paccheri di Gragnano. It’s this large pasta coming from south Italy. It is served with fresh yellow fin tuna, zucchini and clams. It is big pasta, you can see, it’s called pasti di Gragnano coming from Puglia, it is one of the best pastas in Italy. I love it, it is simple but it is colorful, tasteful, it is full of flavor, it is fantastic. This is called Mickey’s Seafood and Shellfish Mixed Grill and is our central dish on our dinner menu. As you can see it is a beautiful selection of grilled seafood. It is simple but you can say it is reflecting our cuisine. And of course with this seafood you need little bit of white wine. So salute. Now I have to go back to the kitchen. I have been resident in this island for the last 4 years so I have been down here for the last 17 years and actually we built Mickey’s first time in 1995. Since then we lost it three times due to a big storm and the last time was in 2004 when Fabian struck Bermuda. The place was completely broken down so we had to rebuild it in the fashion you see it today. But for me it is like going back home to Italy with some beautiful beach place which brings in an experience that many people, they don’t live everyday wherever they come from. We have a cooking style that you know you can make any gourmet restaurant to be concerned about but at the same time we have the friendly service that make people come back over and over again. It’s a place you come at night time when you feel romantic, you walk on the beach or you stroll with your family and the children run on the sand and play, you can have a casual dinner and like tonight we have the top politician on the island coming in for a special event. We’re ready to offer them the best service that we can offer. That’s the quality of the Mickey’s and this is the passion on our side to make people happy.

Italian Inspiration Comes to Bermuda's Sandy Shore

The only restaurant on the island to have seating right on the sand, Mickey's Beach Bistro & Bar at Bermuda's Elbow Beach is the perfect place for an intimate meal of savory seafood under the stars. The fresh and simple menu includes linguine pescatore, a pasta dish with fresh seafood in a tomato sauce, lemon grass skewered scallops with a coconut dressing and a noisette of lamb with butter, sauteed prunes, potatoes and baked shallots. Chef Massimo Olivari explains how he landed at this bistro-on-the-beach. Born and raised in Italy, Chef Di Meglio discovered a world of fresh fish and seafood and new spices when he moved to Bermuda 12 years ago. These local ingredients inspired a challenge to create innovate dishes with different combinations of flavors. Keeping a simple but refined menu, he displays two of the most popular dishes on the menu at Mickey's: a pink swordfish carpaccio served over a crunchy vegetable salad and garnished with chives and red peppercorn and a chicken mango salad with fresh fruit which has been on the menu since the restaurant opened. Next chef Di Meglio highlights the pasta side of things with a paccheri di gragnano, a large tubular pasta from the South of Italy that's tossed in a sauce of fresh yellowfin tuna, zucchini and clams. Plating up even more sustenance from the ocean, he presents a seafood & shellfish mixed grill. Raise a glass of white wine to fresh island cuisine accompanied by the sound of the ocean's waves.
